Eating for 8 Billion

It is projected that the world could reach 8 billion people by 2023! In theory our globalized agricultural system should be able to provide enough food to feed the world, but at what cost and for how long? What’s particularly exciting about this series is that it is bringing together local innovators to explore the opportunities that are right in front of us, and what better way to do it around good company and a great meal.

Join Plant Chicago for the second dinner in our Eating for 8 Billion (E8B) series to explore different ways to look at consumption, and how you can be an agent of change just by the foods you choose. This series offers attendees an opportunity to meet Chicago-based innovators, learn about local circular economies, and convene with friends around delicious food and drink. Our first E8B featured a meal from Chef Abra Berens (Granor Farm) and various products from fellow businesses inside The Plant.

For our August dinner, the main meal will be prepared by Chef Kuan (Yappah, Marimoto, French Laundry) and Adam Pollack (Closed Loop Farms).

Appetizers will be provided by Beyond Meat, Bike a Bee, Sacred Serve, and No Denial Foods. Chef Kuan’s meal theme will be “nose to tail eating”, featuring tongue in cheek style pigs head, elote street corn, quail egg, and pickled red onion. Chef/Farmer Adam from Closed Loop Farms will be creating a vegan option of wheat and beans (Charred Eggplant Puree, Corn Husk, Loop Epazote broth, Papalo and huacatay) as well as a Raw Summer Salad (microgreens and aromatic herbs)

The dinner will feature additional food and drinks from product sponsors Oatly, Virtue Cider, and Whiner Beer Company.

Starting at 12:00 pm, there will be a panel discussion, drinks, and appetizers up in Plant Chicago’s classroom and Bubbly Dynamics’ winter garden on the 3rd floor of The Plant. The meal will be served in Whiner Beer’s taproom (first floor of The Plant) from 1:30-3 pm. Come early to catch the panel discussion, appetizers, and drinks!

This is a zero-waste event with composting services provided by The Urban Canopy. The meal will be an omnivore’s delight, with plenty of vegan options. More details on panelists, menu items, and chefs coming soon. Please email or call our office at (773) 847-5523 with any questions.
